Bye Bye Sunbeam

Finally my cheeks show signs of recovery. Delicate new skins have now emerged :) Slowly and gradually. I have cut down my daytime outings and anything related to outdoor activities. Basically I only come out to play after the sun sets. Gah, I feel like a vampire!

One of the best ways to spend indoor besides the usual TV shows, movies, art and craft and book, is to bake. At least to me.

I am not a strong believer in those instance baking, ready-made cake mixes. I would prefer doing things from scratch. After all, baking is about producing nothing to something, no?

This is one of the easiest and most hassle-free recipes I had tried, minus the frosting. I can do it everyday!

Best Brownies

Ingredients:

1/2 cup (1 stick) butter or margarine, melted
1 cup sugar
1 teaspoon vanilla extract
2 eggs
1/2 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped nuts (optional)


Directions:
1. Heat oven to 350°F. Grease 9-inch square baking pan.


2. Stir together butter, sugar and vanilla in bowl. Stir together flour, cocoa, baking powder and salt. Add eggs, beat well with spoon and gradually add into batter. Beating until well blended. Stir in nuts, if desired. Spread batter evenly in prepared pan.

3. Bake 20 to 25 minutes or until brownies begin to pull away from sides of pan. Cool completely in pan on wire rack. Cut into squares. About 16 brownies.

Serve when it’s still hot, topped with chocolate syrup and vanilla ice cream!

It has a really good texture, moist and dense. It tasted slight bittersweet so reducing on the cocoa powder or adding a little sugar will do the trick.
